Lately I've been thinking about cereal.
We eat cereal every day for breakfast.
Every. Single. Day.
That's a lot of cereal!
We're DIY people, so I thought, Why not make granola?
It's a snack and a cereal.
Bonus!
I have made this granola three times already, and it's disappeared so fast I didn't have time to photo it.
It's that good!
Now, I like a simple granola -- just sweet oats with a nut or two.
You can take the basic recipe and add anything you want: nuts, seeds, dried fruit.
This recipe will make about a quart sized zip lock baggie worth.
And if your house is like my house, it won't last long!
Homemade Simple Granola
Ingredients
2 cups rolled oats
1 tsp. cinnamon
1 tsp. salt
3 Tbsp. + 1 tsp. canola oil
1/4 cup honey
1/8 cup brown sugar
1 tsp. vanilla
1/3 - 1/2 cup almonds (or really however many you want)
Directions
•Preheat the oven to 325*F.
•Line a baking sheet with parchment paper.
•In a large bowl, mix the oats, cinnamon, and salt.
•In another bowl, whisk together the oil, honey, brown sugar, and vanilla.
•Pour honey mixture over oats, and use your hands to combine. Make sure all oats are covered.
•Spread mixture on baking sheet (leave a few clump because the clumps are the best part of granola!).
•Bake for 10 minutes.
•Flip granola over with a spatula.
•Sprinkle nuts (and seeds) over granola.
•Bake for 7-9 more minutes.
•Let cool completely before adding any fruit.
